Eric Greenspan's Mish Continues The Legacy Of Jewish Delis Into The Delivery Age

LA-based chef Eric Greenspan has lived many livesโ from his start in fine dining to Food Network, virtual brands, CPG, drive-ins, and now, as the local torchbearer for the future of Jewish deli cuisine with this weekโs opening of Mish. As one of CloudKitchensโ first culinary partners in 2018, Greenspan was a trailblazer in the delivery-only space, eventually serving as the Culinary Director for Virtual Dining Concepts (Mr. Beast Burger) under Earl Enterprises. In 2022, he founded New School, a Kraft-style American cheese alternative made with real, wholesome ingredients. Last year, he was the head culinary talent behind the first Tesla Diner in West Hollywood, CA.
As he transitions back into physical restaurants, Greenspan is not simply opening another modern Jewish deli. Mish is structured as an all-day, multi-format food business: cafe, deli counter, market, bakery, bar, delivery brand, catering engine, and upstairs event space. The restaurant gives the brand a home, but the model is designed to make money beyond the four walls while still creating a vibrant third place. HNGRY visited on opening day to beta taste everything from lox and bagels to tuna melts and homemade babka.
