Case in point: there is no equivalent of “pasture-raised” or “grass-fed” labeling in seafood. Enter Shinkei Systems, a vertically integrated seafood company that has raised $30 million from VCs to scale the Japanese harvesting technique of ike jime using software, automation, and robotics. This process is more humane than traditional harvesting, unlocking up to 3x the normal shelf life while preserving quality by eliminating the stress response that degrades 70% of fish quality.
