From Legos To Hand Rolls: How Temaki ToGo Is Creating Novel At-Home Sushi Experiences

Despite the popularity of handroll bars in Southern California over the past decade such as KazuNori, Sogo Roll Bar, and Handrolls by Seabutter, these brands have yet to fully capitalize on the rise of off-premise orders due to quality concerns around warm fish, cold rice, and soggy nori (seaweed). Unlike cut β€œMaki” rolls that are sold in refrigerated containers at grocery stores and eaten with chopsticks, β€œTemaki” handrolls are designed to be eaten by hand within minutes of assembly, prioritizing the crunch of the outer nori cone, room temperature rice, and freshly sliced sashimi-grade fish. Over the past two years, a team of apparel and product design entrepreneurs have been developing Temaki ToGo, a new limited-service brand tailored exclusively for off-premise consumption. This week, HNGRY sat down with the team as it launched its first delivery-only location at Colony in West Los Angeles to talk about its unique approach and the whitespace opportunity it aims to capitalize on.
